If you’re after something rich, yet refreshing at the same time, these mint chocolate protein bars are wonderful. You will need a food processor, so just bear that in mind.  What’s more, making them is a piece of cake, or should that be, a piece of protein bar? Sorry, we’ll get our coats, but not until we share the recipe with you!

Ingredients:

  • ½ cup of unsalted cashews
  • 1 cup of dates
  • ¼ cup cocoa powder
  • ½ cup of almonds
  • ¼ cup of almond milk
  • 2 scoops of chocolate protein powder (or mint choc protein powder if you like it minty)
  • ¼ cup of cocoa powder
  • ½ tsp of peppermint extract
  • A pinch of sea salt
  • 1 tbsp of melted coconut oil (coconut oil is a solid at room temperature)

Method:

  • Pour the nuts into a food processor, and blend until they’re finely shredded
  • Now, tip into the dates, and pulse the mixture so that the dates are roughly diced
  • Next, add all of your remaining ingredients and blend the mixture until it forms a well-blended thick ball of “dough”
  • Tip the mixture into a suitable Tupperware or baking dish, flatten down, and freeze for 30 minutes
  • Remove the mixture from the freezer, cut into bars or squares, and enjoy
  • The remaining bars can be stored in the fridge for several days, although we’re sure they won’t last that long.
